Another very simple and tasty curry, it is just amazing how any kind of vegetable can be made into a curry. Just by adding the basic spice mix to the vegetables and letting them cook to absorb the flavours it turns into a magical meal. This curry goes well as a extra curry to a large meal or makes a quick and simple meal in a few minutes. I think it takes more time to prepare for this curry then it takes for it to be cooked.
Onion & Tomato Curry
Preparation time: 5 mins Cooking time: 10 mins Serves: 4
6 large onions cut into slices
1 tbsp sunflower oil
1/4 tsp each of mustard seeds (rai) & cumin (jeeru)
1/8 tsp asoefatida (hing)
1/2 tsp turmeric powder (hurdur)
1 tsp chilli powder, salt and cumin & coriander powder (dhana jeeru)
1/2 cup tomato pulp (I use a peeled plum tomatoes from a tin)
1 tbsp chopped coriander
1) In a medium heavy based pan on a medium heat heat the oil, once it is heated after a few seconds add the mustard seeds (rai), cumin (jeeru) and asoefatida (hing).
2) Once it starts to pop add the sliced onions and the remaining ingredients, and leave to cook for about ten minutes. As soon as the onions become tender then you are ready to serve your curry.
